In Dealu Mare, Pinot Noir is a challenge that the oenologist has taken on. Hot summers lead to an alcoholic concentration that must be masterfully controlled in order for the wine to remain balanced. We wanted a fruity wine, with aromas of black cherries, sour cherries, blackcurrants and which fades discreetly in aromas of spices and toast, coming from oak barrels.
Pairings
The delicate Pinot Noir tannins go well with fine meat, such as a lightly caramelized duck breast in a frying pan, which retains its juiciness. Wine is also a good companion for soft cheeses, such as a matuerd or semi-hard Camembert, such as Gruyère.
For vegetarians, we recommend a risotto with mushrooms, preferably mushrooms, sprinkled with a little truffle oil for extra flavor.
